The saffron flower is the result of a mutation from the crocus cartwrightianus flower which grows on the island of Crete. Saffron is the name for the stigma which is red and shaped like a fine thread.

The saffron picking process begins by picking the flowers, then separating the saffron pistils (stigma) from the flowers. The next step is to dry the stigma. Antioxidants can protect body cells from damage caused by free radicals, which can cause chronic diseases, such as cancer, diabetes and heart disease.
